Overnight Oats

Lately I have been on the go so having an easy breakfast has been key for me. This allows me to wake up to a healthy, vegan and gluten free meal. I’ve put together this super simple and easy recipe for Overnight Oats. There are two flavors matcha strawberry and raspberry kiwi.

This week we spent a week night at River Cabaan in Tillamook, Oregon to escape from the city, play games and eat food with good friends. I also wanted to wake up and not have to cook so this meal was an easy way to feed myself the next day. I make them the night before and just pull them out of the fridge in the morning to enjoy.

Overnight Oats recipe :

1 cup of milk ( I use oat or almond)
1 cup of oats
2 tbsp of chia seeds
1 tbsp of agave or simple syrup (if you like sweetened)

Optional add ins
1 tsp of matcha powder ( I use @teabar culinary matcha) + freeze dried strawberries
OR
2 tbsp of fresh raspberry juice + 1 kiwi cut
Steps:
1. combine milk, oats, chia, agave in a Tupperware container or jar with a lid.
2. Add in matcha or raspberry flavoring.
3. Mix well, and refrigerate overnight.
4. To serve, layer in fruit, coconut flakes , or other toppings.
